If he does not prevent, blood total +2. The first wounds him (i.e. sends him to torpor) without burning any blood. Then he burns one blood per extra damage and if there is more damage and he cannot burn blood, he burns.

Note that only the final damage needs to be aggravated. If you do blood total+1 normal damage and 1 aggravated, the sequence is different but the vampire also burns. He first burns 1 blood per normal damage to avoid going to torpor, then he takes 1 normal damage and cannot burn blood so he goes to torpor, then he takes an aggravated and cannot burn blood so he burns.

That is the default of blood stealing: it cannot send vampires to torpor or burn them. If you steal more than his blood total, then the extra amount is just lost. But if you steal and do damage at the same time, the stealing resolves first so the vampire will be empty when he takes the damage.
