Is superior version of Shepherd's Innocence undirected action (or is it directed at all players who control animalism cards)?
If it is successful, can I rearrange retainers that I already have on my vampires?

I'm not Ankha, but IIRC yes and yes. Superior is an undirected action and you rearrange all relevant cards in game.
