Correct.
Rötschreck's "end combat" is resolved when the card is played.

For Immortal Grapple nullifying the strike, maybe instead something like "Your opponent steals your weapon with first strike, when your strike was at normal speed." So your strike never resolves, but you cycled DBR because you have 6 of them in your hand.

I overthought a bit on that one.

DBR and IG can't happen in the same strike phase.
