Poking around on Ebay, I noticed that the Anthology sets available there are listed at $80-100 USD. Is than an indication that they're sold out, or are sellers jumping to price gouging prematurely?

There have been overpriced anthology sets on ebay for a while. According to the website where you can buy them, they are still available. www.worldofdarkness.berlin/product-page/test1

Sure. I was only asking out of curiosity regarding whether the price-gouging on Ebay was based on an actual lack of supply or the anticipation of same.
