file Press and Taste of Vitae

At a tournament this weekend a player I was in combat played a Taste of Vitae after pressing to continue combat, as I see it ths card text is "This vampire gains an amount of blood equal to the amount lost by the opposing vampire to damage during this round.", and we were now in another round of combat, where my vampire didn't loos any blood, so, imho, her vampire shouldn't have gain blood.

I'd appreciate any enlighment on this subject.

Taste of Vitae "Only usable at the end of a round of combat." So it is used at the end of a round, after presses, not in the beginning of the next round.

"6.4.4. Press

At the end of a round of combat (if both combatants are still ready), the combatants will either go their separate ways (the default) or one of them will give chase. Presses can be used to continue combat (start another round of combat)..."

My confusion is because if the press start another round of combat, are we not in a new round as soon as the press is declared/played? it's just a technicallity but I don't want to insist on it in a tournament if I'm wrong.

Your quote is incomplete.

At the end of a round of combat (if both combatants are still ready), the combatants will either go their separate ways (the default) or one of them will give chase. Presses can be used to continue combat (start another round of combat) or to end combat (cancel an opponent's press), similar to the way maneuvers are used to determine range. The two combatants can continue playing presses (to keep offsetting the effects of their opponent's last press) for as long as they wish. A minion cannot play two presses in a row (which would effectively cancel each other). If there is an uncanceled press to continue, then another round of combat begins.

If a new round would start as soon as someone plays a press to continue, how would the other player be allowed to use a press to end combat?

The press step is a step on its own. The new round will start only when that step is over, and only after the previous round has ended.

So you and your opponent play presses to figure out if another round occur. When you're done, the round ends (you can play Taste of Vitae). Then a new round begins.
