The VTES One blog recently posted the old ruling from LSJ that a minion with 2 Lunatic Eruption placed on it cannot act.

As above, and the minion taking the action to burn this card takes 1 unpreventable damage when this card is burned.
It seems arbitrary that LSJ ruled the enter combat effect to stack. Couldn't it be ruled that both Lunatic Eruption can force you to target a ready minion. You choose prey's minion X for both Eruptions. And a single enter combat ensues?

No.
Each card creates a mandatory action.
The card does not create a target.
The card could certainly be rewritten to do what you're asking, but the existing card text does not support that interpretation.

Well, despite your best effort, I don't really this as being simpler or more intuitive. Also, it don't expand well to other mandatory action, so the "stuck" ruling would still need to be here for every other mandatory action card, like Spirit Marionete.
I don't think it's simpler because the ruling is right here in the rulebook, not out of LSJ ass : a minion who have 2 mandatory actions at the same time is stuck and cannot act.
Wanting to modify that so that "identical" action seem both problematic to define (how one can define two mandatory action to be same ?) and leading to a lot of other confusion (if the important part is attacking one of my minion's prey, can I use Nose of the Hound ? Does the card give me a built-in rush ? And does it cause NRA ?)

Rulebook references "two or more different mandatory actions," but I can see how two copies of the same exact action could be two different actions per LSJ.

They are not the same action. One comes from "Lunatic Eruption #1", while the other comes from "Lunatic Eruption #2".
Similarly, if you have 2 Haven Uncovered on your vampire, he can attempt to remove the first one, untap, and attempt to remove the second one. That's not the same action (though it looks quite similar).
