I suppose the question is:
Can a minion have more than one copy of the same conviction?
The anwser to that question is: nothing prevents it. You're limited to 5 convtions per minion, but that's all.

Can you burn more than one conviction card for multiple effects? Like burning two or more Strike with Conviction cards for multiple damage or bleed bonus?
And can you burn Strike with Conviction to add +1 damage with a gun weapon?

Sort of.
No, because Strike with Conviction doesn't give you +bleed or +damage, it gives you an action or a strike.
And just like you can't play Computer Hacking twice to get +2 bleed on one action or Lucky Blow twice to get +2 strength on one strike, you can use one Strike with Conviction for one action or one strike. But you could, for example, use Strike with Conviction for two different strikes in one action.
Secong Sight is self-limiting:
React with Conviction doesn't stack because it cancels something. Once the thing is cancelled, there's nothing for a second one to cancel.
But you could, for example, burn one React with Conviction to cancel aComa Majesty and then when the opponent plays a second Coma Majesty or Staredown, cancel it with a second React with Conviction. (Edit: Coma's a bad example, being only playable on vampires. Oops.)
