How is this handeld when a minion has +2 strength?


It uses the default strength. +2 strength is not the default strength.


Ignore. Found definition of default strength in rulebook 6.4.5 under hand strikes.

Edit: cancel post seems not to work. Found answer to my question before posting, hit cancel and it send my message anyhow.

They have whichever strength is printed. Vampires have 1 strength (irrespective of +X modifiers) for concealment purposes. Simple ;) However, the question of my own: do strength changers (not enhancers/debuffers) Torn Signpost and Erosion change that base value for equipping weapons?

No, because they are not the default strength. The default strength, it is not them. Strength, it has a default which is not this.
