If Lorenzo Detuono uses his ability to take control of a minion will it's current state of tappedness continue or be reset to untappedness? Or does it matter if it was burnt or torpored/incapped?

It doesn't change anything - his special moves them to your ready region "instead" of leaving the ready region, so the minion is left in the state it was. This means you get the minion in whatever tapped/untapped state it's in, with whatever blood/life (except for the 'no life' bit of his text), with whatever cards/equipment, with whatever permanent problems it's got from Command of the Harpies or Incriminating Videotape etc.

So if Carlton Van Wyk blocks and gets burnt in combat by Lorenzo, then stolen by him, he should still be tapped with one life, correct?

That would depend on how you burned him. If you burned him by getting him to zero life, then yes - he'd have tapped from a successful block, hit zero life, and come under your control, tapped, with one life.

Based on the vampire burning ruling I'm about to quote (burning a vampire who still has blood on them), if you burned him through some other effect that didn't affect his life (e.g. Blood to Water, picking something at random), then he wouldn't burn and would come with whatever life he already had - which might be more than one. (And if he was already tapped, he'd still be tapped.)
