file Final in a multideck tournament

you can chose any deck in final

Is this official?
If there's no official response, we'll announce at the tournament that players who reach the finals must play with a deck they've played in a previous round.

Idk if you can find official response. I organize a lot online multi deck events,I talk with players with big tournament experience, all they say how you can chose any deck in finals, and I organize official online multi deck events on this way

I find the ability to exchange cards between rounds very odd and have never seen it used in drafts.

But, if the tournament organizer thinks it will work for their tournament, then by all means they should use it. Especially if players are in favor.

The rules said:
Between rounds, players may freely switch decks (or cards in their decks).
But the deck in the final must be a deck player in a previous round or can be another different deck?

Any deck.

3.1.5 Multi-Deck System
Players are prohibited from making modifications to their decks between rounds unless the tournament uses the following multi-deck rules. The multi-deck system can be used at any tournament that is neither a national championship, a grand prix, or a continental championship. Organizers choosing to use this system must announce its use in advance of the tournament date. Players may choose to bring any number of tournament-legal decks to the tournament and/or extra cards to exchange with cards in their decks (also known as a sideboard in some games). Between rounds, players may freely switch decks (or cards in their decks).

(the final round is a round).

In a Draft tournament, I believe you can change cards from your deck (from the first round) and use some of the cards you drafted between rounds, and even finals, is it correct ?

If you judge, yes. If I judge, no. :P

More seriously, I don't see the tournament rules making exceptions for limited format. In a "normal" event, no changes between rounds. But you can declare the event "multideck" and suddenly all changes are allowed.

That's why I ask for an official answer : for the French Draft Championship it will be allowed, and as you wrote I always thought and have been playing that way, so what's the "real" answer ?

The real answer is in the tournament rules:

7.5.4. Deck Construction
Once drafting is complete, players are given a set amount of time, determined by the event organizer, in which to construct their decks from the cards they drafted. The decks must be constructed according to the specifications of section 7.2.1. The head judge or tournament organizer may require players to record on a decklist every card they intend to use in their decks, as well as all cards they drafted.

It is fixed before the first round, and cannot be changed.

Which means you write your deck and your side deck (in other ccg) but you don't answer if the decklist which by your quote is all cards you drafted can be "changes" and some alterations done.

I believe Yes, as the "Decklist" includes the deck but also all the other cards, so any deck build with those cards enters your définition.

So I still want to know if there is an official rule, except from the Multideck option.
