times Form of Mist + Telepathic Tracking/Psyche!

So should I conclude that there is basically no difference between TT and Psyche except that a Psyche would remove things such as Carrion Crows but TT would not?

Well, if you're only considering post-combat effects and until the end of combat stuff, yes, that's what cardtext reads.
Psyche! starts a new combat after the end of this combat.
TT continues current combat.

So, if there was something that was lasting till the end of combat (Drawing out the Beast, Torn Signpost, Carrion Crows, Weather Control, ...) they are still there in that new round after TT was played.
If there was something that was lasting till the end of combat, they end at the end of combat and Psyche! is played.

EDIT:
There are some differences between TT and Psyche!, the major one being that you can't Psyche! if there is already a combat queued (Illusions of the Kindred, sup' Blissful Agony), but you can TT (which cancels the post-combat part). That's a generic ruling - can't queue a combat if there is already one in the queue. [RTR 20020501]

So Minion A plays a Carrion Crows, Minion B plays a Weather Control. At the Declare Strike Phase, Minion A plays a Form of Mist. Minion B declares an irrelevant strike (e.g. Hand-strike)

Option 1
In response, Minion B plays Telepathic Tracking. So the Weather Control and Carrion Crows would remain in play (since the existing combat is continuing) and the additional text of Form of Mist would be cancelled.

Option 2
In response, Minion B plays Psyche. So the Weather Control and Carrion Crows end, the text of Form of Mist is cancelled and a new round of combat starts.

Well, cardtext isn't cancelled, it just doesn't happen. But that's how it works, yes.
However, a few points:
* Psyche / TT aren't played "in response" to a strike declaration. They are played at the end of combat, which happens at Form of Mist's resolution.
* Carrion Crows and Weather Control aren't in play, they're in the ash heap. Their effect, though, is still there. It is common usage to leave these cards in the play area as long as they have an effect, but you should remember they're in the ash heap (matters for Erciyes Fragment).

If you continue the combat or start a new combat, you lose whatever was supposed to happen after the first combat.
Lost effects can be (amongst others):
- Rötschreck's "This vampire is tapped and sent to torpor" (but the card is still put on him)

Rötschreck
Type: Master
Master: out-of-turn. Frenzy.
Put this card on a vampire when an opposing minion attempts to inflict aggravated damage on him or her, whether the damage would be successfully inflicted or not. Combat ends. This vampire is tapped and sent to torpor. This vampire does not untap as normal. During this vampire's next untap phase, burn this card.

So, since the "put this card" text comes first, that is why the "put this card" effect happens? If so, and the "This vampire is tapped and sent to torpor" text doesn't happen, by what logic does the "This vampire does not untap as normal. During this vampire's next untap phase, burn this card" manage to stay in place, if it does stay in place?

It stays in place because that is the effect of the card (rotschrek) in play, not at all related to the go to torpor part. If you somehow remove the rotschrek from the vampire before their next untap phase then they would untap

More precisely, the "Put this card..." part happens before combats ends.
Psyche! and TT nullify only the combat ends and the effects that follow that combat ends.

Correct.
